In my last box, I received organic peaches, cucumbers and basil. Peaches are wonderful for your Luteal Phase, and in the past I had been baking them in cookies. YUM! After a conversation with a good friend of mine, she mentioned using them in a summer salad, and I was sold!
This summer salad was super easy to make, and the perfect cold add-on to a warm summer meal!
3 peaches, cut into small chunks
1 cucumber, peeled and cut into chunks
4 large basil leaves, cut into small pieces
salt and pepper, to taste
2 TBSP extra-virgin olive oil
2 TBSP apple cider vinegar
2 TBSP lemon juice
1 TBSP honey
salt and pepper to taste
Cut produce, and add in a large bowl
In a separate bowl, mix dressing ingredients and once mixed, transfer into produce bowl, and stir
Place in fridge, to marinate.
Best if eaten that day, however, it stays in the fridge for up to three days.
