I've been SO into products that contain good-for-you ingredients; ingredients meant to help your body heal, and function the very best it can.

I have a couple FAVORITE brands, right now, that combine the superpowers of superfoods, mushrooms and adaptogens and one of them is REBBL. As it usually happens, Whole Foods had a sale on REBBL products, the other day, and I decided to take advantage and purchase a few of my favorites: Dark Chocolate Protein, Reishi Chocolate and Turmeric Lemon Tart. The two chocolate flavors literally taste like the adult-version of chocolate milk - delicious, creamy and SUPER good for you! I like to combine those in a version of my homemade lattes, or drink them by themselves (seriously, pick one of these chocolately guys up)! However, the Turmeric Lemon Tart is one I don't normally purchase, but since I love the benefits of turmeric, I decided to let one bottle come home with me, too!


Why Turmeric

Turmeric (specifically the curcumin in turmeric) is a very healing superfood. According to Alisa Vitti, functional nutritionist and women's hormone expert:

My Follicular Phase (first days after my menstrual cycle) is here, and it always seems like a time for new beginnings! I feel lighter and ready to tackle the month! When it comes to cycle-syncing, this phase is extra special because it means one thing... CASHEWS! Now, I don't cycle-sync 100% (I have to live!), but I believe it's important to incorporate foods that will help you thrive, based on where you are in your cycle. And what do cashews mean, if you're me?! Well, two things: mac and cheese (which I'll post about soon), and CHEESECAKE!

Yes, VEGAN cheesecake. Creamy, decadent and filled with delicious superfoods, perfect for curbing your sweet-tooth! I decided to combine REBBL's Turmeric Lemon Tart with some cashews to create the most delicious of cheesecakes, and YOU. GUYS. THIS. IS. GOLD. (haha, pun intended... since I used Turmeric)!


Ingredients

Crust

Turmeric Lemon Tart Vegan Cheesecake

Turmeric Lemon Tart Vegan Cheesecake

  • 1/2 cup raw almonds

  • 2 TBSP ground flaxseed

  • 1 TBSP hemp hearts

  • 1/4 cup gluten free oats

  • 1/4 cup maple syrup (I used Lakanto) Click here to get 25% off your first order!

  • 2 TBSP coconut oil

Cheesecake

  • 1 1/2 cups raw cashews (soaked overnight, unless you have a high-powered blender - then I just soaked for 15 minutes, in hot water)

  • 6 TBSP maple syrup (I used Lakanto) Click here to get 25% off your first order!

  • 1/4 cup water

  • 3 TBSP coconut oil

  • pinch sea salt

  • 1 bottle Rebbl Turmeric Lemon Tart

  • *Optional toppings: Bee Pollen (I used some from Ames Farm)

Instructions

  1. Grind the crust ingredients together, in a food processor, until you get a sticky paste

  2. Pour crust out onto a 8x8 pan (or pan-size of your choice); flatten and place in freezer

  3. Meanwhile, mix together the cheesecake ingredients, on high, until it becomes a liquid-consistency

  4. Take crust out of the freezer, pour cheesecake mixture on top of crust

  5. Top with your favorite, fun toppings (I used bee pollen) and then put back into the freezer and let sit over night

  6. Take out 30ish minutes before you want to serve, cut into pieces and enjoy!
