I know what you're thinking, "BEETS?!"
Yes, these little delights are sure to be the perfect pick-me-up for your sweet-tooth craving (especially when you don't want to ruin your healthy eating plan)!
I whipped these up during my Menstrual Phase, and if you're into Cycle Syncing, this is the PERFECT sweet-treat for that time of the month! This recipe (which I modified from i dream of pb), tastes like a moist, little brownie cookie. Yum, right?!
Chocolate Beet Cookies
- 2 cups beets (I used Love Beets)
- 3/4 cup almonds
- 1.5 cups almond flour
- 1/4 cup cashews
- 1/4 cup unsweetened shredded coconut, plus extra for rolling
- 1/4 cup hemp seeds
- 2 TBSP coconut oil
- 2 TBSP raw cacao powder
- 1 tsp pure vanilla extract
- 5 dates
- 1/2 tsp cinnamon
- 1 scoop Vital Proteins Collagen Peptides
- 1 tsp baking soda
Combine all ingredients into a food processor, blend until there are no chunks and the mixture reaches a dough-like consistency
Spread a layer of shredded coconut onto a plate
Using a cookie scoop, scoop out a tablespoon-size amount and place on parchment paper-covered cookie sheet
Push down, lightly, until each ball resembles a cookie (they won't spread out in the oven)
I covered some in shredded coconut, so do this now, if you wish
Repeat until all the dough has been used
Place the baking sheet in the oven, on 350, for 10ish minutes.
